Fujinomiya Yakisoba

In Fujinomiya City, the food processing industry has developed for many years based on the abundant spring water, and there are currently four yakisoba noodle manufacturers. Fujinomiya yakisoba noodles are characterized by their unique "thickness" and "firmness" created by forcibly cooling the noodles and coating them with oil. There are also ways to eat them that are unique to this area, such as finishing them off with shaved sardine powder.

In the city, there are many "yakisoba restaurants" where people can casually eat yakisoba, as well as noodle manufacturers who manufacture the noodles, so yakisoba has long been a part of the local food culture of Fujinomiya. This led to the Fujinomiya Yakisoba Society, a volunteer group of citizens, working to revitalize the town, and now yakisoba has become a representative B-class gourmet food popular nationwide, enjoyed by a wide range of generations.
